I am a huge fan of broccoli salad. Huge. I make it all the time in the summer. It’s a fairly simple thing — broccoli, red onion, bacon, raisins, dressing. I avoid additions like nuts and cheese (what??!).
So when I saw this recipe, I thought we were going to be fast friends. I loved the idea of turning broccoli salad from a side dish to a main dish. This you can eat for dinner, my friends. Pasta salad is great for dinner, why not a broccoli pasta salad?
We were headed to Point Reyes the next day so I decided to make this to take along for beach food. I wasn’t sure about the grapes (don’t like in broccoli salad) but loved the idea of the toasted pecans. LOVE pecans.
Result? Boring. While the son and husband both eat broccoli salad, neither touched this. I was munching it all by myself on the beach. As I wasn’t a fan of other stuff I brought along (fried chicken for kids and their friends plus chips and fruit), I made this my lunch. But I was really feeling deprived after eating this. BUMMER!
